I’m a snacker. Popcorn, chips, crackers, nuts are most of the time my go-to snack when I just need to have a salty savory something. Most of the time is late after dinner, or just before, at wine time as my husband calls it. But sometimes I just need to put something together for last minute guests, something they can munch on while the kids decorate my house.

It just happened, a few weeks ago we had to change a beach play-day for an indoor one due to rain. I was getting nervous. No frozen cookie dough ready to be popped in the oven, no muffins or other treats. I had to come up with something. Fast!

And what’s better than a buttery, flaky, crispy cheese stick to snack on a rainy day when all you crave is savory? Sure, I could have made them using puff pastry but that required a trip to the store since homemade takes like forever but with a hand of flour, some diced butter an egg and lots of cheese I saved the day!

I happened to have a wedge of Jarlsberg cheese in the fridge. If you have never had Jarlsberg cheese, is sweet, buttery, creamy, nutty with big holes, similar with Swiss cheese. It’s a Norwegian cheese made from cow’s milk.

The cheese sticks are so easy to put together. The dough comes together in 5 minutes in the food processor. If you don’t have one you can make the dough by hand as well, crumbling the butter with the flour and mixing in the egg.

Once the dough is done, the waiting part begins. A chilling time for about 1 hour does the trick. Once the dough is chilled roll it out and cover with grated cheese. Fold and grate some more cheese. These cheese straws are cheesy! They have both inside and outside grated cheese. Pure deliciousness.

Yield: 2-3 dozens

All you need are 4 simple ingredients to have your own flaky, buttery, lightly crunchy cheese sticks. Great to snack on their own or for dipping, these cheese sticks are the perfect addition to your next cheese and wine party or any other occasion.

Ingredients

  • 2 1/4 cups (270 grams) all purpose flour
  • 1/2 cup (113 grams) cold butter, diced
  • 1 egg
  • pinch of salt
  • chilled water
  • 4 oz (113 grams) [Jarlsberg cheese http://www.jarlsbergusa.com/]

Instructions

  1. In a food processor add the flour, butter, egg and salt. Pulse for a few seconds to 1 minutes or until it resembles crumbs.
  2. Slowly add a few drops of chilled water until it comes together in ball.
  3. Take the dough out, wrap it in plastic and chill for 1 hour.
  4. When the dough is cold, turn the oven on. Preheat to 400F.
  5. On a slightly floured surface roll the dough into a 12 X15" rectangle.
  6. Brush one half of the dough with a little water and grate around 2 oz Jarslberg cheese on top of it. Cover with the other half and press gently to make sure there are no big air bubbles in between.
  7. Grate some more Jarlsberg cheese on top. Using a pizza cutter cut the cheese sticks.
  8. Place the cheese sticks on 2 baking sheets and bake for 10-12 minutes or until golden brown.
  9. Enjoy!

      Hi Mandy,
      Yes, you can prepare the sticks as directed and freeze. When needed, just take them from the freezer and bake as fresh.

    What other kinds of cheese can you use? Hard to find Jarlsberg, and/or quite expensive at “Gourmet Cheese Shoppe”!

      Hi Reyam,

      If you’re referring to aged cheddar, it could be used but add slightly less since it’s not as creamy as jarlsberg and you don’t want to make the cheese sticks dry.
