Rich as a brownie but with a cake texture, this double chocolate coconut dessert is bursting with coconut flavor from both the coconut extract and coconut flakes. Top with toasted coconut flakes for a fancy look.
Since I started this little blog of mine I’ve paired chocolate with so many ingredients I’ve lost count. Of course, some of them have been used lots of lots of time, like peanut butter, strawberries, mint to name just a few, but coconut, coconut holds a dear place in my heart.
One could say I love it so much it’s the only secret ingredients featured twice in our monthly chocolate party. This month and last year. It should come to no surprise I made another dessert before this month’s party closes.
This chocolate coconut dessert is as easy as a dessert can get. The cake part is done in one bowl with ingredients you most likely have. Butter, sugar, eggs, flour, cocoa and coconut flakes. I used a teaspoon of coconut extract but if you don’t have any, use vanilla extract. Or chocolate extract. Bake the dessert, top with rich ganache and grab yourself a fork! Time to dig in!
