I can’t believe Valentine’s Day is just around the corner. Where did 2015 go?

I’m usually on top of the things but I feel lately I’ve been all over the place. Either, things go wrong and need my immediate attention, or I overbook myself and instead of focusing on one thing, you guessed it, I try to juggle all of them in the same time and nothing gets done. Do you know the feeling? I’m glad to hear I’m not the only one and to those of you on top of your agenda, I bow to you!

You know what makes everything better? Chocolate! Chocolate is the answer to everything! Especially if it comes in a little cake like this that’s so easy to make you’re not going to believe!

Valentine’s day is just few days away and if you are like me, you have plans for the big day. A romantic late dinner, maybe even arrange a babysitter ahead of time and go out for the night. Or even making plans to pop the big question (so exciting!!).

Although it’s been few months now, and we travel back and forth every other week, I’m always looking forward to having my husband home. And this Valentine’s day my love is coming home. (3 more days till he’s here, but who’s counting!)

So amazingly easy to prepare, these gooey fudgy brownie bars will leave everyone drooling! Fudgy brownie, creamy cheesecake, gooey marshmallows and oozing chocolate - what's not to love?

I have a confession to make. I watch very little TV. I have a couple of shows I watch every week but past that I can’t name 5 of the housewives, all series combined, I don’t know who’s the most fashionable or what are the latest trends.

And I’m OK with that. I get to watch a little bit of news in the evening, cooking channel in the background and the rest, well – not my piece of cake.

My piece of cake is a whole pan of these gooey fudgy brownies! Come closer to tell you a secret – I already made them twice this week and will make them again Sunday for Game day party – because I’m all about the food!

This year is the year I’m trying something new, recipes I’m not familiar with, conquer classic American recipes. Some of you might laugh right now, but I had no idea until a few years ago what a whoopie pie is. I could have sworn it’s a pie. Why would someone call a dessert whoopie pie if it’s not a pie.
The same goes for Boston cream pie. I’ve learned it’s actually a cake.
Or why red velvet is SO popular around Valentine’s day? I thought it’s a chocolate themed holiday.
And the list keeps going but I won’t bore you with it. Needless to say, I still have a lot of things to learn.

Rich as a brownie but with a cake texture, this double chocolate coconut dessert is bursting with coconut flavor from both the coconut extract and coconut flakes. Top with toasted coconut flakes for a fancy look.
Rich as a brownie but with a cake texture, this double chocolate coconut dessert is bursting with coconut flavor from both the coconut extract and coconut flakes.

Since I started this little blog of mine I’ve paired chocolate with so many ingredients I’ve lost count. Of course, some of them have been used lots of lots of time, like peanut butter, strawberries, mint to name just a few, but coconut, coconut holds a dear place in my heart.

This chocolate coconut dessert is as easy as a dessert can get. The cake part is done in one bowl with ingredients you most likely have. Butter, sugar, eggs, flour, cocoa and coconut flakes. I used a teaspoon of coconut extract but if you don’t have any, use vanilla extract. Or chocolate extract. Or you could use imitation coconut extract. Pure coconut extract is sort of hard to find.

Bake the dessert, top with rich ganache and grab yourself a fork! Time to dig in!…
