I’m bringing you another decadent brownie today. Just like the mint chocolate chip frosted brownies, it combines both chocolate and mint, a combination very popular this time of the year. If you ask me, this combo should be enjoyed year round, especially on hot summer day to cool down a bit.

I’ve been holding on to this recipe for weeks now. I was just waiting for the right moment to share it with you. With St. Patrick’s day just few days away, what better time than now to share these better than thin mint brownie cheesecake bars?

What I love most about this recipe? Except the combination of flavors and textures, I love the fact that these fancy looking bars take so little time to come together.

The bars start with a layer of Oreo cookie crumbs. I prefer buying the Oreo pie crust instead of making my own, but you can pulse a few cookies in the food processor. It’s just as easy.

The brownie is a melted chocolate based brownie, mixed with sugar, eggs and flour – ingredients I’m pretty sure you already have on hand.

The cheesecake layer is whipped in no time – cream cheese, sugar and egg. A few drops of green food color to dress them up for the holiday.

Unless you’re as obsessed with seasonal candy as me and have mint truffle kisses, you can use thin mints, york peppermint patties or any mint chocolate candy you have on hand.Mint truffle brownie cheesecake bars

Since an entire bag of mint truffle kisses is used, it makes a little difficult to swirl the cheesecake layer with the fudgy brownie. To make sure I don’t end up with a messy looking bar I spread the cheesecake filling over the brownie layer. If you ask me now, I think it looks better this way. To give the bars a fancy look,  I drizzled them with melted chocolate.

Better than thin mints, mint truffle brownie cheesecake bars

Over the top fudge brownies packed with mint truffles and a layer of creamy cheesecake, these brownie cheesecake bars are better than any mint patties you ever had!

Ingredients

  • 1Oreo pie crust
  • 1 bag Hershey's mint truffle kisses
  • 1/2 cup butter
  • 3 oz Hershey's chocolate chips
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup all purpose flour
  • 8oz cream cheese
  • 1/4 cup sugar
  • 1 egg
  • Green food color
  • 1 oz Hershey's chocolate chips

Instructions

  1. Heat the oven to 350F. Line an 9X9" baking pan with parchment paper.
  2. Remove the Oreo pie crust from the package and add the crumbs to the prepared baking pan. With your fingers press the crumbs evenly on the bottom of the baking pan. Set aside.
  3. Unwrap all the Hershey's kisses and arrange them over the Oreo crust.
  4. In a small saucepan add 1/2 cup butter and 3 oz chocolate chips and cook, over low heat, stirring constantly, until the chocolate and butter are melted, combined and silky smooth.
  5. Add the chocolate mixture to a mixing bowl. With the paddle attachment on, start beating the chocolate on low speed for 5 minutes or until slightly cooled.
  6. Optional you can leave to cool at room temperature.
  7. Beat in 1 cup sugar and without turning the mixer off, add the 2 eggs, one at a time.
  8. Stir in the flour.
  9. Pour the brownie batter over the mint truffle kisses.
  10. To make cheesecake layer, in a mixing bowl add the cream cheese, sugar and the remaining egg in a mixing bowl and beat until smooth and creamy. Add enough food color to reach the desired green color.
  11. Spread the cheesecake layer over the brownie batter.
  12. Bake in preheated oven for 35-37 minutes.
  13. Remove from the oven and let cool completely at room temperature.
  14. To decorate, melt 1 oz chocolate chips and drizzle it over the entire pan before cutting into bars.

    OH MY GORGEOUSNESS! Look at those geometric delights! It speaks mint, but it screams “I am the coolest looking dessert ever to grace your plate and to soothe your palate!” OMG, how awesome and popular would be if you brought a plate of these guys to a party!!!??? They look like little pieces of edible art! I could just keep going, but to cut it short I am in LOVE!

    I made the mint truffle brownie cheesecake twice. The 1st time when I cut them the brownie mixture oozed out all over. I figured I did something wrong or my oven was turned off.. so again I had ingredients I thought thankfully to try it a 2nd time. Much better but the brownie filling is oozing as a cut piece sits on a plate. Its not baking enough to create a brownie texture. Very disappointed and I don’t know what the issue is but I will not be wasting another bag of mint candies on this recipe.

      Hi Monika,
      I’m sorry to hear you had problems with this recipe.
      To have a runny brownie batter, it only means the bars were not baked long enough or weren’t let to cool completely.
      My brownie layer was moist but it was not runny.

        My 2nd attempt was done around 10:30 pm and I baked it at 350 degrees for 37 minutes. It was left to cool until the morning as I was making them for my children’s youth group bake sale. They were definitely cooled enough. You stated that they may not have been baked long enough. It appeared baked but its difficult to look through the parchment paper but from what I could tell the edges were brown. How much longer would you recommend baking it for? Should the cheesecake topping be placed on the brownie mixture or should I have baked the brownie first and than cool…spread topping and bake again?
