Hand written recipes. Mostly in pencil, rarely in pen. Some written more than 30-50 years ago. Old, faded and discolored papers. Sometimes even written on a paper napkin. Rarely a recipe card. Age spots and spots in a couple of places over the recipe. Maybe batter spills from the same cake or maybe something else?

I wish I knew the stories that come with old recipes. All the family gatherings. Birthday parties or holidays spent together. 

This chocolate cake with coffee chocolate ganache is one of those old recipes. So old it has been in my friend Amber’s family for at least 3 generations!

 The moment I received the recipe from Amber I was a little hesitant. I love chocolate. I love coffee. I love chocolate and coffee but mayonnaise in a cake? I’ve seen recipes floating around for mayonnaise cakes but can’t say I had ever tried one nor was I curious. I love combining chocolate with lots of other ingredients, but mayonnaise was not on the list. Amber’s comment “This cake recipe defines chocolate cake for me” made me re-think the whole mayonnaise thing.

Now, after making the chocolate cake I had to say : you won’t even know this cake is made with mayonnaise! It’s moist and tender. It’s sweet and has a rich chocolate taste and the coffee it’s just a subtle flavor.

I’ve made the recipe in a 9 inch round pan and halved the coffee chocolate ganache and I did well. If you follow Amber‘s advice and bake the cake in a 9X13 pan you may need more ganache, depending on how thick you want it.

    Hi I have a question, is the picture of the chocolate cake you have here the same as the recipe for the mayo cake?? the reason I ask is that the the one in your picture looks much much more moist than the one on your friends blog… and if so did you do something different?? Thanks

    You state that you halved the ganache recipe; did you also do that to the cake recipe? Because the original recipe is for a 9X13 pan. I like the height and size of your cake. Thanks.
